Here's how to recreate that bright watermelon picture in your own kitchen - you'll love the lime, mixed with salty cheese, and refreshing slivers of mint. They wake up your palate and dress up one of summer's favorite fruits.
Summer Dressed Watermelon
One quarter watermelon
Pecorino or Parmesan cheese
Chile
Lime juice
Fresh mint leaves
Slice the watermelon into 2 inch wedges and lay artfully on a large platter. With a microplane zester, grate the hard cheese over the watermelon.
Chiffonade the mint leaves and sprinkle them on top of the watermelon as well. Sprinkle the chile and squeuze the limes evenly over the slices. Serve with napkins!
